As we have mentioned before, we have been doing a movie party a month with our kids. Each party is complete with simple decorations, themed food, the movie itself, and, of course, an ice cream to match. It has been so fun creating the flavors!
Now, I know that the first thought that came to your mind with movies and apples was “Snow White”. However, that is not our movie. This ice cream is actually inspired by the movie “Robin Hood”. We wanted something green, with some brown and maybe some gold to represent Sherwood Forest and the gold that Prince John knows and loves so much. With green, we really could only think of two flavors: mint or apple. When we realized that caramel could add that gold color we wanted and the choice was clear!
And so, caramel apple was born. We found a lot of different ideas on how to get that apple flavor, but the idea we liked the best was so to cook the apples with some sugar to release all of the juices, then blend it with the custard base. Viola! Delicious apple ice cream without an icy texture. The ribbons of dulce de leche and chocolate were also the perfect touch! Such a great fall flavor!
Caramel Apple
A fall favorite in every bite!
Ingredients
- Apple Base
3 Granny Smith apples (peeled and cut into 1/2 inch chunks)
1/4 cup brown sugar
1 cup whole milk
1 cup heavy cream
1/2 cup sugar
2 eggs
1/2 tsp vanilla extract
dash of salt
Green food coloring (optional)
- Dulce de leche
1 can sweetened condensed milk
- Chocolate Swirl
6 Tbs heavy cream
1/4 cup sugar
2 Tbs brown sugar
1 Tbs butter
1/2 cup bittersweet chocolate chips
1/2 tsp vanilla
Dash of salt
Directions
- Dulce De Leche (pressure cooker)
- This is easy, but time consuming. You’ll have to do it at least a few hours before you make the ice cream. Pour the contents of the sweetened condensed milk can into a pint sized jar.
- Place the trivet or steamer into the pressure cooker liner. Add the jar on top of that. Pour water in until the water comes half way up the jar.
- Set the pressure cooker to manual (high pressure) for 1 hour. When it is done, quick release the pressure. Carefully (it will be hot!) remove it from the pressure cooker.
- Allow it to cool for at least an hour, but more if possible. You want it as close to room temperature as possible.
- Chocolate Swirl
- Add the cream, butter, and sugars to a small saucepan. Heat and stir until it comes to a boil. Allow to boil for 2 minutes.
- Pour the hot cream/sugar mixture over the chocolate chips and allow it to sit for about 3 minutes. After three minutes, stir until you have uniform consistency.
- Add the vanilla and salt. Stir well. Set aside to cool until you are ready to use.
- Apple Ice Cream
- Peel and chop the apples. Add them to a medium saucepan over medium heat with the brown sugar. Stir continuously and cook until most of liquid is cooked off, about 15 minutes.
- Remove from heat and allow to cool. Store in the fridge until you are ready to mix with the ice cream (we let it rest overnight).
- Heat the 1 cup heavy whipping cream and 1 cup milk on low in a medium saucepan until it reaches 140° F, stirring occasionally. While the custard heats, using an electric mixer to whisk the 2 large eggs in a medium mixing bowl until light and fluffy, about 2 minutes.
- While the cream is still heating, slowly add the sugar into the eggs, whisking thoroughly to make sure the mixture doesn’t become grainy.
- After the cream reaches the target temperature, gradually pour it into the egg and sugar mixture, again whisking each time the cream is added to avoid cooking the eggs.
- Pour the entire mixture back into the medium saucepan and heat it to 170° F.
- Allow the ice cream to cool in a sealed bag in an ice bath for about 15 minutes. Add the vanilla and salt.
- Pour half of the ice cream into a blender with the cooked apples. Blend until the mixture is completely smooth.
- Pour the rest of the ice cream base into the ice cream maker, along with the blended ice cream mixture.
- When ready, make in your ice cream maker based on the maker’s instructions.
- Assembling the Ice Cream
- Pour a thin layer of chocolate sauce on the bottom of the container of your choice. Add a layer of dulce de leche on top of that. Finally, add a layer of ice cream.
- Continue the layers until you reach the top. We topped ours with a layer of chocolate and dulce de leche swirl, just for fun!
- Move the ice cream to the freezer and freeze until hardened (at least 4 hours).
